Set in the beautiful Chiltern Hills in 65-acres of magnificent grounds and formal gardens (complete with grand topiary and fountains), Danesfield is a country-house hotel on a grand scale. It’s the third house to enjoy the magnificent views over the River Thames here since 1664, the present property was built in 1899 as a family home. Constructed of white stone with castellated towers, tall chimneys and raised terraces, it has all the hallmarks of a fairytale castle and oozes original features. Nothing prepares you, however, for the stunning culinary experience, where chef Adam Simmonds shows off his fine kitchen pedigree. The modern approach is underpinned by a classical theme to produce top quality, innovative cooking using top-notch seasonal produce and some serious technical skill. Clean flavours, textures and presentation allow each dish a unique taste experience; take roasted loin of venison served with butternut squash purée, chocolate polenta, braised snails and bohea lapsang jelly, and to finish, how about the chocolate marquise delivered with pumpkin ice cream, Tia Maria jelly, pumpkin purée and Tia Maria froth. Ancillaries, like amuse-bouche, breads, pre-desserts and petits fours hit top form too, while service, from a highly skilled team, delivers a friendly and attentive dining experience. Once you’ve eaten here, you’ll certainly want to repeat the experience. (Afternoon teas in the spectacular lounge or on the terrace are also a delight.)
"Magnificent grounds and views over the River Thames are part of the attraction of this Victorian Gothic pile, but no such views are forthcoming from the somewhat regal limed-panelled dining room. However it does focus your attention on what’s on the plate. Adam Simmonds relishes ‘taking you on a revelatory journey.’ His ‘creativity and modernity’ begins with a lime and lager jelly with lime granita – a witty take on shandy – then, as a clever contrast, follows with a watercress soup and poached quail’s egg. The first proper course ‘showed elements of pure genius’: confit chicken oysters with mizuna, dandelion and spring truffle, enhanced by an undertone of mustard, its centrepiece a quivering, barely-cooked hen’s egg – ‘a brilliant marriage of flavours.’ Indeed, flavours and textures are subtle, finely balanced and beautifully judged, and while tastes are not intense, they are true. Roasted loin and rack of rabbit, for example, partnered with white asparagus purée, pineapple jelly and spring white truffle, were given an extra dimension by a perfumed consommé. Carefully managed pre-desserts, an exotic fruit soup with banana sorbet followed by fruit jellies (blackcurrant, apricot, pineapple) and a dozen cheeses, mostly French, arrive with home-made apricot bread and digestives. These are inspirationally rounded off by apple and celery sorbets, epitomising a kitchen on top form. Desserts are equally gentle-tasting, as in a lime parfait, lime-leaf infused tapioca topped with a sensational ginger foam. The impressive wine list extends over 33 pages, with several strengths, not least a run of Champagnes. Prices from £16.95 are moderate for the quality and include 20 wines by-the-glass from £6. "
